Whirlybird, Edinburgh

Opened May 2026

On Victoria Street in Edinburgh’s Old Town, Whirlybird bills itself as a ‘modern tavern’ with an all-day offering. Former Hawksmoor chef Lucia Gregusova heads up the kitchen, focusing on fresh, ingredient-led takes on classic bistro fare. Dishes include whole grilled fish with brown butter, caper and lemon, and seared flat iron steak with rocket, parmesan and aged balsamic. The drinks list is overseen by cocktail bar Panda & Sons alumnus Jono McDowell and features a signature West Bow Coffee with Glasgow 1770 whisky.

Ebb, Worthing

Opened May 2026

From the team behind Perch on the Pier comes Ebb, the latest addition to Worthing Pier’s Grade II-listed Southern Pavilion. The 36-cover restaurant sits above Perch at the end of the pier and enjoys sweeping views of the Sussex coast and the Isle of Wight. Chef Charlie Simmonds is at the helm and small plates are the stars of the relatively short menu, which changes weekly. Made for sharing, dishes include Tunworth arancini with burnt cauliflower and pecorino, and wild garlic and spring pea rigatoni.

Old Point House, Angle

Opened May 2026

Farm-to-fork champion Michelle Evans and her team at Pembrokeshire’s Paternoster Farm have shifted their operations to a new waterfront location six miles (10 km) away in Angle. They’re breathing new life into the 18th-century Old Point House, which closed in 2025, and continuing their sustainable culinary ethos. The pub’s former prep room is being transformed into a bakehouse serving takeaway bread, sandwiches and other homemade goods ready for the busier summer months. There’s a daily-changing set menu for evening dining, plus an innovative array of bar snacks, including local crab butter, is served in the improved bar space.

MAAI, London

Opened May 2026

Great British Menu winner Nikita Pathakji has launched her first solo venture after stints at Michelin-starred Bibendum by Claudi Bosi and Core by Clare Smyth. Pathakji has teamed up with her mother Rima and sister Isha to open MAAI – meaning ‘mum’ in Malay – on Clapham’s Abbeville Road. MAAI presents the family’s take on modern British dining, with à la carte options including seared halibut, Malaysian fish head curry, okra and aubergine. There are also tasting, set lunch and Sunday menus, plus a drinks list curated by Isha.

Domo, Leeds

Opening June 2026

Domo, Sheffield’s family-run Sardinian eatery, is opening a second offering in Leeds’ Tower Works in June. It marks an expansion for husband-and-wife team Sarah Eliott Busceddu and Raffaele Busceddu, who draw on the Mediterranean island’s culinary heritage and hospitality. Menus feature authentic Sardinian dishes like suckling pig and culurgiones (potato dumplings), with ingredients coming from both local producers and directly from the island. Even the drinks menu has an Italian flavour, as wines are sourced near the family’s hometown, Castelsardo.

Chez Rose, London

Opening June 2026

Mayfair’s Row on 5 executive chef Spencer Metzger is branching out with his first solo restaurant, Chez Rose, with backing from chef and restaurateur Jason Atherton. The 46-cover eatery promises to be a modern French bistro inspired by Metzger’s grandmother. The menu is set to showcase simple but refined cooking and high-quality seasonal produce. Sharing plates for two include T-bone steak with bone marrow butter, and poulet en cocotte with vin jaune (chicken casserole with yellow wine) and Jersey Royals.

SisterMoon, Manchester

Opening June 2026

Manchester’s Treehouse Hotel is welcoming a new restaurant to its dining line-up in June. SisterMoon joins farm-to-table restaurant Pip and is situated on the hotel’s newly opened 14th floor alongside a new bar, private event lounge and nine luxury suites. Led by Liverpool-born chef Sam Grainger, SisterMoon marries his passion for South-East Asian flavours and open-fire cooking, inspired by his experiences of cooking with a local family in Thailand.

MOR, Carbis Bay

Opening July 2026

Tom Sellers, the chef behind London’s two-Michelin-star Restaurant Story, is writing a new chapter at Cornwall’s Carbis Bay Hotel and Estate with MOR. Named using the Cornish word for ‘sea’, MOR promises beach views alongside menus shaped by the ocean and Cornwall’s finest produce, including ingredients from the restaurant’s own kitchen garden. Dishes will include Cornish crab with steamed milk buns, house condiments and garden lettuces, and nori-wrapped mackerel escabeche with English wasabi and young ginger. It’s not Sellers’ first time making waves at Carbis Bay; his successful pop-up Story by the Sea was here in 2019 too.
