Taste Update – October 2026

October’s new restaurant openings in Britain are as colourful as the changing seasons. This month, diners can experience Latin American barbecue in Manchester’s Northern Quarter and farm-to-fork fare on a London rooftop. There’s fine dining with a global flavour in County Durham, seaside sharing plates in Brighton and a Scottish outpost for celebrity chef Yotam Ottolenghi. Also on the menu are new eateries in Cardiff, Birmingham and London.

Just opened

ATLAS James and Maria Close, County Durham 

Opened September 2026 

As part of the renovation of Grade II-listed Rockliffe Hall near Darlington, six new dining and bar experiences have been developed with culinary director James Close and his wife, Maria. These include ATLAS, the hotel’s signature fine-dining restaurant, whose dishes are inspired by the couple’s global travels. The 36-cover space revolves around three open kitchen islands, where the chefs craft a tasting menu influenced by France, Spain, Japan and more. 

Solina, Cardiff 

Opened September 2026 

Bath’s Solina Pasta now has sites on both sides of the Bristol Channel, with the opening of Solina Pasta Cardiff on the city’s Westgate Street. The casual Italian is part of the Walcot Group collection of family-run restaurants and hospitality businesses in South West England, including Bath’s Walcot House and Little Walcot in Frome, Somerset. The pasta is freshly made by hand every day and takes pride of place in dishes such as casarecce, cacio e pepe and sedanini with wild venison ragù and Parmesan sauce. 

Dahlia Stereo, Manchester 

Opened September 2026 

Latin American barbecue meets big-name DJs at Dahlia Stereo, a multifaceted venue in Manchester’s Northern Quarter from the original minds behind nearby Ramona and The Firehouse. The 200-capacity space focuses on open-fire cooking, with churrasco steaks, fire-grilled peppers and chicken achiote all bringing the flavour. There’s a Latino touch to the drinks menu too, featuring tequila and mezcal alongside homemade frozen cola cocktails. 

Plates by Phil Bartley, Brighton 

Opened September 2026 

Chef Phil Bartley, who also runs Hove steakhouse Carne, has brought a relaxed sharing plates concept to Brighton city centre. The Norfolk Square site was previously home to Brighton institution The Gingerman, which closed in summer 2026 after almost 30 years in business. Plates’ food menu features lobster rolls, cod roe hash browns and mutton flatbread, while its wine list focuses exclusively on English tipples. 

Nettle, London 

Opened September 2026 

At The Conduit’s rooftop space above Covent Garden is Nettle, the new farm-to-table concept from chef Will Devlin. Devlin’s seasonal menu draws on produce from British farmers, growers and fishers, taking inspiration from the history and heritage of London’s market districts. Fire cooking is the star of the show, and diners can enjoy large plates such as Cornish monkfish and pickles or Kent lamb chop with Blackthorn salt. Small plates and snacks include a pigeon pasty with house brown sauce and pork scratchings with blackened apples. 

Gordon Ramsay at Sea Containers, London 

Opened September 2026 

On London’s South Bank, Sea Containers London hotel has marked a new chapter in its dining offer with the opening of Gordon Ramsay at Sea Containers. Perched directly on the River Thames with a spacious outdoor terrace, the restaurant offers all-day dining with a focus on British meat and seafood. Diners can sample Ramsay’s classic dishes, such as his beef Wellington and fish and chips, while the dessert line-up features traditional British sweets like strawberry trifle and sticky toffee pudding. There’s even the chef’s signature ‘Idiot Sandwich Flight’, a playful nod to one of Ramsay’s famous kitchen stand-offs.

Ottolenghi Edinburgh 

Opens October 2026 

Ottolenghi Edinburgh marks celebrity chef and writer Yotam Ottolenghi’s first restaurant outside England. The all-day dining spot on George Street will serve well-fired morning rolls for breakfast through to sharing plates and slow-cooked clay pot dishes at dinner, overseen by Scottish-born executive head chef Neil John Campbell. Diners can expect local touches like Scottish langoustines, crowdie cheese and heritage whisky on the menu too. 

KIBOU, Birmingham 

Opens October 2026 

A Japanese-inspired restaurant is putting sushi, ramen, sake and whisky in the spotlight in Birmingham this autumn. KIBOU will take up a 200-cover space in the city’s Colmore Row business district, with features including an open sushi kitchen and a private dining space. Guests can sample its signature volcano sushi rolls, katsu curry, bao and gyoza, with options for gluten-free and vegan diners too.
